Clear Basting Sauce
Memphis is ground zero for clear and clear/red basting sauces. At Memphis in May, one of the crown jewels in the BBQ competition circuit basting sauces are many and varied. This turned out to be a mouth watering favorite at a recent Two Guys Grilling Test Kitchen.
1 1/2 Cups White Vinegar
1/3 Cup Honey
1 Tsp Mediterranean
Sea Salt
1 Tsp Granulated Onion
1 Tsp Granulated Garlic
1 Chile
Negro Capped, Seeded, Deveined, Split
1 Cafe Onion Diced Fine
1
Stick Butter
4 Cloves Garlic Crushed
1/4 Tsp Dry Mustard
Combine all in Saucepan
Whisk Thoroughly to Combine
Bring to
a Boil
Reduce Heat to a Low Simmer
Simmer 30 to 45 Minutes
Allow
to Cool
Remove Chile Molido
Blend until smooth
Remove to a
Squeeze Bottle
Serve With Just About Anything
