Double Play Burgers

When I moved to Southern California in 1986, I discovered t what is known as a double - double. Double cheeseburgers were a common offering at the drive in stands when I grew up, but the west coast selection of cheeses was very different. Our options were American or Cheddar. The American and Cheddar used by small burger chains in California are completely different. The White American used in California (a combination of Swiss and White Cheddar), has a more pronounced flavor. The cheddar is pretty much the same, but sliced a little thicker.


1/4 - 1/3 lb Burger Patties about 1/2 inch thick (see Burger Primer)

*Two Guys Grilling© Mediterranean Sea Salt (lightly)
*Two Guys Grilling© Fine Ground White Pepper (light dusting)
*Two Guys Grilling© Granulated Onion (generously)
2 - Slices American Cheese
2 - Slices Cheddar Cheese


Preheat Grill to Hot
Season patties with Dana Point Trinity©
Wait 20 minutes, reduce heat to Medium Hot

Place patties on Grill
Reduce Heat to Medium Hot
Grill 2 to 3 minutes
Turn Over, Grill 2 to 3 minutes
Turn over, rotating 90°
Grill 2 to 3 minutes (really Rare now if you have the courage)
Turn Over, Grill 2 to 3 minutes (now might be a good time)
Place one slice of American on one burger
Place one slice of Cheddar on the other Burger
Wait until the cheese melts
Remove from Grill
Stack on bottom bun, garnish as needed
