Grilled Chicken Curry

During our test kitchens a common practice is to arrange a variety of herbs and spices as a "what if." At this particular session a jar of dry curry caught my eye. The chicken was there, but what to marinate it with? I rustled up some apple juice and here it is:


½ tsp Dry Curry Powder
½ cup Apple Juice
2 Chicken Breasts

Combine apple juice and curry powder. Mix thoroughly.
Allow to stand for 20 min

Place chicken and marinade in a zip top bag, seal.
Refrigerate 20 - 40 min

Place on grill
Grill two to three minutes, Turn over
Grill two to three minutes
Rotate 90°
Repeat until done

You can add garlic or other favorites, but the test panel loved the delicate flavor of this three-ingredient dish.
