Los Gatos Fish Tacos
American Express aired a commercial about local southern Californians that had built a chain of restaurants around a snack they found in Baja. One afternoon Michael Todd and I revisited this phenomenon and decided to give it our own Two Guys Grilling© twist.
Small Corn Tortillas
Roma Tomatoes (chopped)
Catfish
Nuggets
Cabbage (shredded fine)
TGG© Original Rub
TGG© Chile
Chipotle Molido
Avocado Oil
Heat grill to medium hot-place griddle on grill
Rinse and Pat
Catfish Nuggets Dry
Season with TGG© Original Rub, TGG© Chile Chipotle
Molido
Lubricate Griddle with Avocado Oil
Griddle Catfish 1 to 1½ minutes, Turn Over
Griddle 1 to 1 ½ minutes
Catfish is done when
fish has turned white and is flakey
Place Grilled Catfish Nuggets in Corn Tortillas
Top with
Tomatoes, Cabbage, Drizzle with Los Gatos Taco Crema
I had to bring something from the Midwest to this recipe. So
catfish it is. I loved catfish in Iowa and I think you will love it too.
Now that pond-raised catfish is available, it is better than ever.
