Maid Rite Style Sandwiches
When I was growing up in Iowa, a burger at a drive in would cost fifteen cents. But we had a small chain of restaurants called Maid-Rites. These loose burgers were heads and tails above any fried patties. The following recipe approximates theirs, which is a closely held secret. They also have a special cooker, so please bear with me.
4 Lbs Lean Ground Beef
2 Medium Onions, Finely Chopped
1 Tbs Two
Guys Grilling© Mediterranean Sea Salt
1 Tsp Two Guys Grilling© Fine
Ground White Peppe
2 Tbs Two Guys Grilling© Granulated
Onion
Water
Corn Oil (as needed)
1/2 Tsp Dry Mustard
(Optional)
In a Large Skillet (with Cover)
Place Finely Chopped Onion to
Lightly Oiled Skillet
Simmer over Medium Heat Until Translucent
Add
Burger (Breaking it up as it cooks)
Season with Salt, Pepper, Onion,
and Dry Mustard
Simmer Covered over Medium Heat, Stirring
Frequently
Crumbling Until Fine Ground Consistency
Add a Small
Amount of Water to Maintain Moistness (as needed)
Serve on Buns with
Sliced Dill Pickle and your Favorite Condiments
