Memphis Style Pork Ribs
with Two Guys Grilling© Original Rub
This recipe honors the Memphis tradition of dry rub
Use thick (1
½”) bone-in country style ribs
Or full slabs Pork Spareribs
Prep Ribs - Rinse and pat dry
Score about 1” between rib bones at
bottom of the rack
Season generously with Two Guys Grilling© Original
Rub on meat side
(You shouldn't b able to see the meat)
Season more
lightly on the white bone side
Allow seasoning to set for 30 minutes or
wrap in clear plastic and refrigerate up to two days before grilling
Preheat grill to medium hot
Place ribs with fat side down directly
over heat
and sear for 2 min on each side
Reduce grill temp to medium low heat
Move to indirect heat away from
direct flame
(We like to use the top warming shelf away from the open
flame)
An oven thermometer placed next to the meat will read about
325�
Cook for 12 minutes per side, making three turns (48 minutes
total)
On third turn baste with Sweet Baby Ray's© Original BBQ
Sauce
Make one final turn and baste
Cook for 8 minutes
Remove
ribs to platter and allow to rest for 5 minutes
