Saddleback Sirloin Lettuce Wraps


Our lite and healthy California Q version of steak and salsa makes a great appetizer or a generous serving delivers an ideal low-carb entrée. This dish can be served with your favorite salsa or pico de gallo...but our guests swear by using “G-Swing’s Mild Salsa”.


2 ½ lbs Top Sirloin (about 1 ½“ thick)
1 large head of Romaine Lettuce
4 Cloves Garlic - peeled and sliced lengthwise
The Dana Point Trinity©
TGG© Mediterranean Sea Salt (lightly)
TGG© Fine Ground White Pepper (light dusting)
TGG© Granulated Onion (generous)
TGG© Original Rub (generously)
Worcestershire Sauce
"G-Swing's Mild Salsa"

Prep the Steak:
Pierce the sirloin with a paring knife to create slits about 1“ apart on one side of the steak
Insert Garlic slice into each slit
Season both sides of the steak with The Dana Point Trinity© and TGG© Original Rub
Pour two drops of Worcestershire in each garlic slit
Allow seasoned meat to rest about 15 minutes while grill comes up to medium-hot temperature

Grill The Steak:
Fire up the grill and bring to Hot or Medium Hot
Place seasoned Sirloin on grill for four minutes
Rotate the steak 90° (do not turn over) and cook for two additional minutes
Turn steak over and grill for final 4 minutes
Remove to platter and allow to rest for 5 minutes before slicing about �� thick (across the grain of the meat)

Prep and Grill the Lettuce:
While steak is resting, separate, rinse and pat dry individual leaves of romaine lettuce
Place individual leaf(s) on top shelf of grill for about 30 seconds to slightly wilt

Assemble Wrap:
Remove to board and place a slice of the sirloin in the lettuce and roll it up (toothpick if serving as appetizer)

Serve:
Holding the wrap upright, place a spoonful of G-Swing's Salsa in the top funnel of the wrap.
Enjoy a generous bite, and reload with another spoonful of salsa.
